Mint Choc Chip Smoothie
My first favourite flavour of ice cream as a kid was Mint Choc Chip. This smoothie is the grown-up healthy version! :) Full of antioxidants from the mint and cacao, vitamins and minerals from the spinach and creaminess and good fats from the avocado. This smoothie is an absolute treat just like it's ice cream inspiration.
Prep time: 5 minutes
Serves: 1
Ingredients
- 1 & 1/2 cup unsweetened almond milk
- 1 handful of baby spinach
- 1/2 a banana
- 1/2 an avocado
- 1 tbsp cacao
- 1 -2 tsp maple syrup
- Leaves of 7-8 sprigs of mint
- 1 tbsp of cacao nibs
Directions
- Prepare to cook with love.
- Add all the ingredients except for the cacao nibs to a blender and blend until smooth. About a minute or so.
- Add the cacao nibs and whizz for 10-20 seconds. Just enough time to break them up a little so you get the choc chip feeling in your smoothie.
- Pour into a glass.
- Eat and enjoy
